Preheat oven 350°
Put large spoonful of coconut oil in a large frying pan and turn on low heat.
Start with one onion and some garlic.
Mince the garlic.
Dice the onion in about half inch pieces
Add the garlic and onion to the coconut oil.
While the onions and garlic are cooking cut 4 slices of thick cut bacon in 1 inch chunks.
Then the onion is just starting to get translucent add the bacon.
While the bacon is cooking start cutting your soft veggies like zucchini and mushroom.
Stir in veggies.
Add a bit of season.
While the veggies are cooking crack and scramble 8 eggs.
When the veggies are softening slightly dump the frying pan mixture into a corning wear or 8×8 baking dish.
Pour the eggs on top.
Bake about 30-35 minutes until golden brown on top.
Serve and enjoy!
